This week Binge Cafe welcomes guest chef Ly to the chopping block.
Ms. Ly took Ms. Binge's aversion to Vegan Rella as an opportunity to make Quesadillas with the offending substance, and by jim if she didn't make the most delicious, melty, toasted crispy 'dilla ever. She also added the vegetables pictured below.
Vegan Rella has improved ("they have a new recipe!" she persisted).
I thought the taste was similar to Bleu Cheese. Though I was never a fan of this moldy dressing, the slight hint of Bleu (maybe a light bleu) worked well in this recipe.
Accompaniment: White Wine. Soy White Russians.
